2023 Witches Gone Wild
wild yeast fermentation, barrel-aged
Usually, we like to control our fermentation pretty carefully, but sometimes we like to let Mother Nature go wild. This cider went into a neutral French oak barrel to ferment and age. We call it the wild barrel and it just makes a magically funky cider with bright cherry notes and a nose like a kombucha.
- Alcohol by volume: 8.4%
- Volume: 500ml
- Carbonation: lightly carbonated
- Apples: Braeburn, Black Twig, Nehou, King David, Cinnamon Spice from the Lewicki Ranch and Vineyard in Creston, CA
- Pairings: all the cheeses, fatty fatty porky goodness, french fries
